A restaurant under construction in the basement of the former Marine Midland Bank headquarters will be called Vault 237.
It might open this year, but expect it in 2020, just to be safe.
The 16-story building at 237 Main St., next to the Seneca One tower, is called The Marin now. Its upper floors are luxury apartments, two stories are offices, and The Admiral Room wedding and event space was launched last year.
The building’s restaurant, Vault 237, will be a two-story space whose most secluded tables will be in a century-old bank vault. The space will be able to hold 20 to 25 people, and will be available for restaurant patrons to reserve, said Steve Ambrose, a marketer who is a partner in the project.
The lower level will also include an anteroom that could hold about 50 people, and a middle passage that will be a lounge and service bar, he said.
The top floor of the two-story restaurant will be its main dining room, with a lounge and bar, able to hold about 125 to 140 people, Ambrose said.
When the restaurant is operating, Ambrose said, its website will include a calendar that prospective diners can check to see if the vault is available, or reserved for a private function.
The menu will offer new American dishes that use local, seasonal products where possible, he said.
A draft menu includes small plates like a shrimp arancini with sambal aioli, a Flat 12 roasted mushroom salad, and Korean fried Brussels sprouts with gochujang. Prospective entrees include beef short ribs with leek puree and fingerling potatoes, scallops with carrot puree and snap peas, and a bone-in pork chop with spaetzle and red pepper coulis.
Vault 237 will aim to offer “the perfect combination of good food, and good drinks, in an atmosphere that people really haven't really experienced in Buffalo,” Amborse said, “like a New York City vibe in downtown Buffalo.”
