The beef noodle soup and lemongrass beef rolls at Pho Golden are excellent representatives of classic Vietnamese dishes, but it's the banh xeo that's just irreplaceable.
Served at Pho Golden (3004 Pine Ave., Niagara Falls), it's a thick pancake made of coconut milk batter, golden and earthy with turmeric. Where American flapjacks might have blueberries or chocolate chips dropped into them while they cook, banh xeo get shrimp and sliced pork.
Folded around a bean sprout filling, the pancake arrives with a bevy of customization options. Shredded pickled carrot and daikon radish, fresh Thai basil and cilantro sprigs can be tucked inside, as you like.
Tear off a handful of pancake, doctor it up, and dunk it in the tangy lime-imbued fish sauce. Where versions at other places can arrive dripping with oil, Pho Golden's properly cooked version ($8.95) is a pleasure to behold.
