Cheesy Chick, Pizza Amore create dishes with Galbani cheese

Remember the “Cheese, glorious cheese!” jingle of 1987?

Well, we’re going to be singing that song from the rooftops as Galbani – the folks who sponsor the Galbani Buffalo Italian Heritage Festival – have partnered with two local food trucks for a unique event that leads up to the festival that will make a debut at its new location at the Buffalo Outer Harbor, July 13-16.

For a limited time, The Cheesy Chick grilled cheese truck and Pizza Amore wood-fired pizza truck will offer signature dishes featuring Galbani cheeses for two weeks prior to the festival.

And for all your hard work eating one of the signature dishes, you’ll receive $1 off admission to the festival.

But let’s get to the gooey goodness.

From June 27 through July 3, The Cheesy Chicken will serve the Galbani Meatball Mediterranean which includes Galbani ricotta and Parmesan cheeses along with meatballs, tomato sauce and pesto layered on thick Italian bread.

The Strawberry Basil Prosciutto will layer fresh mozzarella, strawberries, basil and prosciutto topped with balsamic glaze on white bread.

You get a break on July 4 before Pizza Amore picks up the torch (or rather fires up the wood oven) from July 5 through 12.

Galbani's chef Marco (Mark Sciortino) and Dave Perri of Pizza Amore collaborated to create the Galbani Amore Pizza. The thin crust wood-fired pizza will be topped with Galbani fresh and whole milk mozzarellas, then oven-dried peppadews (sweet piquant peppers), fresh basil, special seasonings and what we call gilding the lily – “cup and char” pepperoni.
