A Clarence barbecue specialist is moving his operation to a Sheridan Drive restaurant after demand outstripped his roadside stand.
Bill Richer, who has operated Wild Bill Hickory’s BBQ at 9840 County Road since 2013, said he’s moving to 9105 Sheridan Drive, formerly Emily’s Family Diner.
It won’t be ready until November, and that’s “in a perfect world,” Richer said. “This is going to be a gut job, right down to the studs.”
When the work is done, he hopes to offer the community a solid, casual family barbecue joint with about 90 seats, he said. He expects to offer beer and wine.
He’s already got the County Road roadside stand open, Richer said. He’s planning to keep the roadside stand open until the last moment, perhaps two weeks before the restaurant opens, he said.
“Business has been growing exponentially and I’m there in a trailer in 120-degree heat,” he said. “I can’t do it. I need a place.”
