Spelt flour contains gluten yet is much more soluble than wheat and most other flours, making it more easily digestible for many with troublesome digestive tracts. Yet those with Crohn’s disease or gluten intolerance are discouraged by food allergy experts from eating products it contains. A story in WNY Refresh on Saturday incorrectly said cookies made with spelt flour were gluten-free.
