Single-serving turducken Wednesday at Dockside Grill

At the Dockside Grill in North Tonawanda, Chef Dunbar Berdine has figured out how to serve turducken to the masses.

Wednesday night, Thanksgiving Eve, you can check out Berdine's "turwingen."

The original chicken-inside-duck-inside-turkey preparation doesn't scale well to restaurant service. There's not as many perfect slices in them, he noted. Recently Berdine was preparing to stuff some turkey wings with another filling when he realized a turducken version was possible.

He boned out chicken wings, filled them with duck confit, made them stuffing for turkey wings, and roasted the whole packet in duck fat. "Just to gild the lily a little more," Berdine said.

With green bean casserole, bacon-cornbread stuffing, mashed potatoes and dessert, turwingen is $21. One night only, at least for now. "It's not an easy task," he said.
