WHAT ARE YOU EATING?: Strong diet fuels Ragnar Relay team captain

Denise Salmons, 48, is operations manager at Cornerstone Community Credit Union in Lockport, but she has another title this weekend: captain of Kickin’ Asphalt, a 12-member team from mostly Niagara County in the midst of a two-day relay race north of the border.

The team is among more than 100 participating in the first annual, 193-mile Niagara Ontario Ragnar Relay, which started in Cobourg, Ont., at 6:30 a.m. Friday and ends this afternoon in Niagara Falls, Ont. Salmons and her team will run alternating legs that vary between 3 miles and 9 miles, and prepared in part by running on the Erie Canal towpath at night, while wearing “head lamps.”

How have you changed your diet to prepare for this race?

I haven’t. I try to eat healthy and sensibly all the time. Usually, I do pasta the night before a race, then the morning of the race I usually have a bagel with peanut butter or whole wheat bread with peanut butter.

What are the staples of your diet?

Eggs, whole wheat bread, cheese, chicken, brown rice, a lot of green vegetables: broccoli, green beans, lettuces – the darker the better. A lot of water. Eight glasses of water a day.

Is there anything you look forward to after a race?

A cold beer and a burger.
