Virginia R. Schaffstall of West Seneca, a retired caterer, died Tuesday at Hospice Buffalo, Cheektowaga, after a two-year battle with cancer. She was 76.
Born Virginia Rose Mastandrea in Buffalo, she grew up on the city's West Side and was a graduate of Lafayette High School.
She started her business, Ginny's Catering, in 1981 after years of voluntarily providing food for local functions, including for a sports banquet at her son's elementary school and many other school functions.
After three years of off-premise catering, she and her husband, William, established a headquarters on North American Drive in West Seneca. Mrs. Schaffstall retired in 2001 and turned the business over to her son, Christopher.
In addition to her husband of 51 years and her, son, she is survived by two other sons, William and Michael; and a daughter, Elizabeth.
A Mass of Christian Burial will be offered at 9 a.m. Friday in Queen of Heaven Catholic Church, 4220 Seneca St., West Seneca.
