Aquarium benefit

Seasonings 2009, a benefit for the Aquarium of Niagara, will take place from 6 to 9 p.m. Thursday at the Aquarium (701 Whirlpool St., Niagara Falls). Food samplings will be provided by the Brickyard Pub, the Cheesecake Place, the Niagara Falls Conference Center, Crazy Jake's, Crowne Plaza Hotel, Days Inn, Delaware North Parks Service, the Hard Rock Cafe, Lebro's, Niagara County Community College Culinary Arts Program, Red Coach Inn, Suzanne's Fine Dining, Trio's Restaurant and the Village Bake Shoppe.

The Honeymoon Trail Winery, Heron Hill, Warm Lake Estate and Wagner Vineyards will provide the wine.

Cooking classes

James E. Carlo, director of Trocaire College's hospitality program, will share his culinary techniques in two cooking classes to be offered from 6 to 8 p.m. at the new Russell J. Salvatore School of Hospitality and Business (6681 Transit Road, Lancaster).

Creamy and pureed soups will be the subject March 10; tapas March 24. Classes will be demonstration-style as well as hands-on. Carlo and Bill Metgar, owners of the ACME Personal Chef Service, will take each student through the recipes to prepare the meal.

Executive chef classes

Here's the schedule for the remaining spring executive chef classes to be held at Butterwood Desserts in West Falls:

*Next Friday: Chef Jon Warner of the Hilton Garden Inn (and a CIA graduate) will present a seafood appetizer and teriyaki-marinated strip steak over sushi style rice.

*March 24: Mike Andrzejewski of Seabar will demonstrate Asian-inspired snacks such as steamed shrimp shiu mai, crab cakes, pork skewers and tofu pockets.

*April 20: Chef Joe Jerge of the Mulberry Cafe will prepare homemade mozzarella Caprese and penne alla vodka with oil-poached shrimp as well as chicken saltimbocca with wild mushrooms.

Each class includes a meal, costs $35 and begins at 6 p.m. Call 652-0131 for more information.
