Here's the recipe of the season:


3 to 4 cups flour

1 package yeast

1/2 teaspoon salt

1/4 cup sugar

1 egg

1/2 cup shortening

1 3/4 cups milk
Mix about 1 1/2 cups flour, yeast, salt and sugar. Heat milk and shortening in a saucepan until lukewarm. Add to dry ingredients; beat 2 minutes at medium speed.

Add egg and half a cup more flour or enough flour to form a thick batter. Beat at high speed for 2 more minutes.

Stir in enough additional flour to make a soft dough, kneading lightly. Cover bowl; let dough rise in warm place until double, about one hour.

Place on lightly floured surface; knead lightly. Roll out to half-inch thickness. Cut in squares. Let dough stand covered while you heat oil to 375 degrees.

Fry keuchles a few at a time in the oil. Pull on the outside edges of each square so dough is thinner in the center before frying. Brown on one side; flip and brown the other. Drain on absorbent paper. Sprinkle with confectioners' sugar.
