An easy treat for the holiday:
NO COOK VALENTINE MINTS
5 tablespoons butter
4 drops red food coloring
1 teaspoon peppermint or spearmint extract
1 pound confectioners' sugar (4 cups)
2 tablespoons cold water
Melt butter and add food coloring and extract; stir to blend. Stir in sugar and water. Knead in pan, then on a board until smooth. Roll out on waxed paper to about a quarter-inch thickness and cut into heart shapes with cookie cutters.
Or, make into small balls and flatten with a glass or fork. After shaping, place on cake rack to dry. Makes about 1 1/4 pounds of mints.
