Soprano Renee Fleming and chef Daniel Boulud have figured out a sweet way to end the year on a high note.
Boulud and his pastry chef, Thomas Hass, have developed a dessert based on the singer for the final course of their restaurant's New Year's Eve $1,250 gala menu: La Diva Renee.
The decadent dessert at restaurant Daniel has sable cookie layered with hazelnut wafers, milk chocolate, champagne Chantilly and a chocolate biscuit coated in bittersweet chocolate. It's all topped by a thin milk chocolate square silkscreened with sheet music from Richard Strauss' "Der Rosenkavalier."
Miss Fleming, who will sing from "Der Rosenkavalier" next month at the Metropolitan Opera, sang at Daniel during New Year's Eve in 1998. Other foods have been named after opera singers, including Peach (Nellie) Melba and Turkey (Luisa) Tetrazzini.
"I really feel I should sing for my supper," Miss Fleming said during a luncheon to unveil the dessert Tuesday.
