"Please try to locate and print a recipe for corn fritters," writes a Buffalo reader.

Piece of cake!


1cup flour

1teaspoon baking powder

3/4 teaspoon salt

1tablespoon plus 1 teaspoon sugar


1/4 cup milk

2tablespoons butter, melted

1 1/2 cups canned whole kernel corn

2tablespoons vegetable oil

1teaspoon butter
Combine flour, baking powder, salt and sugar in a bowl. Make a well in the center of the dry ingredients.

Beat eggs well, adding milk and melted butter. Stir in the corn. Pour the egg mixture into the well and combine only until the mixture is blended.

Heat the oil in a skillet. Add the one teaspoon of butter and combine. When the grease sizzles, drip heaping tablespoonsful of batter into the skillet. Fry until golden brown, turning once. Serve with maple syrup. Makes 10 fritters.
