A cooling recipe to try at this time of year:
1cup unflavored yogurt or sour cream
1small mild onion, chopped
Chopped cilantro, if desired
Slice cucumbers thinly. It is not necessary to peel them unless they are waxed. Sprinkle with salt, place in a dish towel and squeeze until much of the moisture is removed.
Place in a bowl with the yogurt; stir in the chopped onion and cilantro. Serve very cold. Makes 6 servings.
