A TASTE OF SPRING

The light flavors of lime, lemon and pineapple remind us it's time to think spring.

LIME SALAD WITH CREAM CHEESE

1 can (20-ounce) crushed pineapple

2 packages (3 ounces each) lime flavored gelatin

1 package (3 ounce) cream cheese

1 tablespoon lemon juice

Dash salt

1 cup chopped nuts

1 cup heavy cream, whipped

Drain juice from pineapple. Add enough water to juice to make 2 cups. Bring to a boil: pour over gelatin. Stir until dissolved.

Stir cheese until smooth; add to the gelatin mixture. Add lemon juice and salt. Chill until beginning to set.

Fold in drained pineapple, nuts and whipped cream. Pour into mold and chill until firm.
