SOME APPLES, SOME BURGERS

Today's recipe, Apple-Kissed Chicken Burgers, was created by Jason Boulanger from Vermont, for the Crisco Great American Cooks Contest.

APPLE-KISSED CHICKEN BURGERS

Non-stick butter-flavored cooking spray

3/4 pound boneless, skinless, chicken breasts

1/2 cup peeled and chopped red apple

2 tablespoons minced green onions or scallions

3/4 teaspoon lemon pepper

1/4 teaspoon salt

1/8 teaspoon apple-pie spice

1/2 cup bottled chili sauce

1/2 cup apple jelly

4 whole-wheat hamburger buns, split (toasted, if desired)
Preheat the broiler. Spray the broiler rack with non-stick cooking spray and set aside.

Rinse the chicken and pat dry. Place the chicken in a food processor or grinder and finely grind.

Remove the chicken from the food processor and place in a bowl. Add the apples, green onions, lemon pepper, salt and apple-pie spice and mix well. Shape into 4 patties about 3/4 -inch thick.

Broil about 6 inches from the heat for 6 minutes. Remove from the oven and turn to the other side. Broil 6 minutes longer, or until no longer pink in the center.

Combine the chili sauce and apple jelly in a small saucepan on medium-low heat. Cook, stirring frequently, for 10 minutes. Remove from the heat and set aside to cool slightly.

Place the burgers on the bottom halves of the buns. Top each patty with 2 tablespoons of sauce. Cover with bun tops and serve immediately. Makes 4 servings.

Each serving contains approximately 316 calories; 49 mg cholesterol; 4 gm fat; 468 mg sodium; 24 gm protein; 48 gm carbohydrates.
