Winter squash (acorn, butternut, buttercup, hubbard and spaghetti) have hard, thick rinds and seeds that are not edible. Choose squash that are heavy for their size; store them in a cool ventilated place for up to a month. Winter squash can be baked, boiled or steamed. Pick up the flavor with ginger or a little cinnamon.
