Lunch options go pop-up style on the Medical campus

A daily rotation of pop-up vendors are coming to the lobby of the Innovation Center on the Buffalo Niagara Medical Campus.

The BNMC Inc., the nonprofit umbrella organization overseeing the campus, has requested proposals from food vendors to sell lunch and snack items from 11 a.m. to 2 p.m. Monday through Friday in the center's lobby, where a staple vendor has left.

The new arrangement is expected to be finalized and in place by late July.

Niagara County farmer Julie Blackman – who runs Farms & Artisans, a bakery/food market in Snyder – is in the lobby on Tuesdays. BNMC Inc. is also looking to bring items from a food truck in on another weekday. Overall, a farmers market theme is the goal for most days.

"We're an innovation center and we started asking around and (heard about) pop-up vendors. It sounded so exciting," said Jonathan McNeice, BNMC's director of healthy communities."We want some healthy options. It will be consistent each week."

If the pop-up vendor model works well, McNeice said, the organization hopes other institutions on the campus will consider doing it.
