Cheesecake Guy truck starts Buffalo rounds

The niche food trucks keep coming with the arrival of the Cheesecake Guy truck.

Matthew Schelter is the owner-operator. That’s his portrait, graffiti-artist-style, on the side of the truck. He’s been selling cheesecake for about a month. Flavors include peanut butter, strawberry, maple bacon and more. Slices are $6 or $7.

“We make everything from scratch” in his commissary, a Lancaster church kitchen, Schelter said. His family helps out with the cooking duties, he said.

He’s working on some tie-ins with local craft beer. “I’ll go to Resurgence and have their chipotle cinnamon stout and think, I can do a spin-off of this, with chocolate.” 12 Gates Brewing will start selling flights of cheesecake, paired with their beers, he said. “It’s kind of crazy,” he allowed, “but they play off each other.”
