Think you’ve got a big Christmas dinner to cook next week? Imagine being Petty Officer 2nd Class Brendan G. Cameron, a Kenmore native who will help serve more than 300 sailors deployed overseas aboard the USS Nitze.

Cameron, 32, is a culinary specialist responsible for operating and managing the messes on the destroyer. “We are put to the test three times a day by some picky eaters,” he wrote by email.

Is it easy for you to eat healthy aboard the ship?

It is. When our service line is set up, each item has a serving card that explains the portion size, calories, carbohydrates, protein and fat amounts. We do have people who follow certain diets, so the cards can help them with their counts so they can keep with their healthy diets.

What foods and restaurants in Western New York do you miss most?

Anderson’s roast beef, Ted’s Hot Dogs, Kenmore’s Original Mike’s Subs. Fish frys from the Grill at the Dome.
