Jill Chiacchia was rolling along in the corporate world until her youngest daughter, Lauren, who is now 12, developed Type 1 diabetes.

The family decided that was a wake-up call for all of them and made the unconventional choice to consider nutrition and exercise as important as medicine when it came to Lauren’s treatment.

“As a family, we radically changed our diet and lifestyle,” said Chiacchia, who since 2011 has been a holistic health coach and owner of the beHealthy Institute in the Village of Hamburg. As they did, the family members noticed their energy levels went up and their aches and pains went down.

What are the staples of your diet?

Generally, I’m a vegetarian by day and an omnivore in the evening. For snack foods, I love tree nuts – almonds, cashews, walnuts, foods that are in season. Root vegetables, green beans.

For breakfast it’s oatmeal or fresh vegetables. For lunch, I like salads, quinoa tabouli salad. For dinner, we do chicken. With four kids, it isn’t always easy, but one of the foods we like is curry chicken with apple chutney.

Foods you avoid?

Fast foods, drive-thru foods.
