Mighty Taco will add as many as six locations to its chain of Mexican restaurants in the next two years, company officials said.
Mighty Taco opened its newest restaurant Monday at a former Burger King location at 2884 Ridge Road in West Seneca. In December, Mighty Taco will replace an older location with a new store with drive-through on Niagara Falls Boulevard in Amherst, across from Kohl's and Wegmans. It also may open locations in Batavia, East Aurora and Orchard Park.
"We've been closing down smaller units and replacing them with larger units with more seating and drive-throughs," said Andy Gerovac, who owns Mighty Taco with his partner Dan Scepkowski. "Almost 60 percent of your sales go through the drive-through."
The owners, who are both in their 50s, say they are content with business and don't plan to expand outside of Western New York. They prefer to grow with the cash on hand and opening multiple locations in a new market would require an infusion of capital.
Mighty Taco started in 1973 with a store on Hertel Avenue and today has 16 locations in Western New York. Mighty Taco employs 600.
