This is one of those popular pies that makes its own crusts.

Impossibly Easy Pumpkin Pie

1 cup canned pumpkin

1/2 cup biscuit mix

1/2 cup sugar

1 cup evaporated milk

1 tablespoon butter, softened

1 1/2 teaspoons pumpkin pie spice

1 teaspoon vanilla

2 eggs
Heat oven to 350 degrees. Spray 9-inch pie plate with cooking spray.

Stir all ingredients in a medium bowl, using a fork until well-blended. Pour into the pie plate.

Baked 35 to 40 minutes or until a knife inserted in center comes out clean. Cool at least 2 hours before serving. Serve with whipped cream.
