Q: Why is a meal so important?

Mark Weatherbee: Too many people underestimate the meal. It's not just to fill your appetite. It's for comfort, atmosphere. The meal should surprise you, excite you. I love food and I love eating.

Paul Daggett: It's doing what we need to do with the people we love. Even if it's on TV trays, it's family. It's a bond.

Q: Who is your mentor?

Weatherbee: Rose Catalano, my high school instructor. She focused me in to learning as much as you can in the business. I went to the Culinary Institute of America because of her.

Daggett: That would be Mark. I enjoy the chance to work closely with him and learn from him.
