A favorite supper dish at this time of year:


4 large green peppers

2 tablespoons butter

1/2 pound ground beef

1 small onion, minced

1 cup hot cooked rice

2 eggs

Salt and pepper

Grated cheese or buttered bread crumbs
Cut tops off peppers; remove seeds and membranes. Cook in boiling water for about 5 minutes. Drain. Saute onions in butter until soft; add beef and cook until red color is gone. Drain.

Add rice, eggs and seasonings. Place this mixture in drained peppers. Cover with cheese or bread crumbs. Place in baking pan.

Bake in a 350-degree oven for about 20 minutes. Makes 4 servings.
